Ingredients

Dry ingredients

  • 1.5 cups whole wheat flour (or all-purpose)
  • 0.5 cup old-fashioned rolled oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt

Wet ingredients

  • 2 large eggs, room temperature
  • 0.5 cup honey or maple syrup
  • 0.33 cup melted coconut oil (or unsweetened applesauce)
  • 0.25 cup milk of choice
  • 1 tsp vanilla extract

Fruits and nuts

  • 2 cups diced apples (about 2 medium, 1 grated, 1 diced)
  • 0.5 cup chopped walnuts or pecans (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, then fold in apples and nuts.
  • Divide batter into muffin cups and bake for 18–22 minutes.
  • Cool briefly, then enjoy warm or cooled.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
