Ingredients

Dry ingredients

  • 2 cups rolled oats
  • 1 cup milk
  • 1 tsp baking powder

Fruits and eggs

  • 3 eggs eggs (can be substituted with flax eggs for vegan)
  • 1 medium carrot (grated)
  • 1 medium apple (diced)
  • 80 g raisins (soaked)
  • 8-10 dried apricots dried apricots (chopped and soaked)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix oats, baking powder, and soaked dried fruits in a bowl.
  • Add eggs (or flax eggs), grated carrot, and diced apple; stir until combined.
  • Pour batter into a greased baking dish and bake for 30 minutes.
  • Let cool before slicing and serving.
