Ingredients

dry ingredients

  • 1 ½ cups almond flour
  • 1 tsp baking powder

wet ingredients

  • ½ cup extra virgin olive oil
  • 3 large eggs
  • Zest and juice of 2 fresh lemons lemon (zest and juice)
  • cup honey or maple syrup

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8-inch round pan.
  • Mix almond flour and baking powder in a bowl.
  • Whisk eggs, olive oil, honey, lemon zest, and juice until smooth.
  • Fold dry ingredients into wet mixture gently.
  • Pour batter into pan and bake for 25-30 minutes.
  • Cool for 10 minutes before transferring to a wire rack.
