Ingredients

Dairy

  • 200 g halloumi cheese, sliced

Legumes

  • 1 cup green or Puy lentils, rinsed

Broth & Water

  • 3 cups vegetable broth or water

Vegetables

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Citrus

  • 1 lemon lemon, juiced and zested

Oils & Condiments

  • 3 tablespoons olive oil

Seasonings

  • to taste Salt and black pepper

Instructions 

  • Cook lentils in broth for 20-25 minutes until tender, then drain.
  • Sauté chopped onion in 2 tbsp olive oil for 5-7 minutes until translucent.
  • Add minced garlic, cumin, and paprika; cook for 1-2 minutes until fragrant.
  • Mix lentils into the skillet, add lemon juice, zest, salt, and pepper; cook for 5 minutes.
  • Heat remaining olive oil and cook halloumi slices 2-3 minutes per side until golden.
  • Serve lentils topped with halloumi, garnished with herbs if desired.

Notes

For extra flavor, add fresh herbs like parsley or cilantro before serving.
