Instructions
Cook lentils in broth for 20-25 minutes until tender, then drain.
Sauté chopped onion in 2 tbsp olive oil for 5-7 minutes until translucent.
Add minced garlic, cumin, and paprika; cook for 1-2 minutes until fragrant.
Mix lentils into the skillet, add lemon juice, zest, salt, and pepper; cook for 5 minutes.
Heat remaining olive oil and cook halloumi slices 2-3 minutes per side until golden.
Serve lentils topped with halloumi, garnished with herbs if desired.
Notes
For extra flavor, add fresh herbs like parsley or cilantro before serving.
