A hearty and nutritious soup combining lean ground turkey with fresh vegetables, perfect for a wholesome meal.

Ingredients

Vegetables

  • 1 tablespoon olive oil
  • 1.25 pounds lean ground turkey (93% lean or higher)
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf bay leaf
  • to taste Salt and black pepper Salt and freshly ground black pepper
  • 8 cups low-sodium chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen corn kernels
  • 1 cup frozen green beans

Leafy greens (spinach or kale)

Instructions 

  • Dice vegetables and mince garlic.
  • Brown ground turkey in a pot until no longer pink.
  • Sauté vegetables until softened, then add garlic, herbs, and bay leaf.
  • Add broth and tomatoes, then simmer for 20 minutes.
  • Add frozen vegetables, cook for 5-7 minutes, then stir in greens and season to taste.

Notes

You can customize the greens and adjust seasoning as desired.
