Ingredients

Oil

  • 1 tablespoon olive oil

Ground Turkey

  • 1 pound ground turkey

Vegetables

  • 1 medium yellow onion, diced
  • 1 clove garlic, minced
  • 1 pinch red pepper flakes
  • ¼ teaspoon coarse ground black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil

Canned Goods

  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 can great northern beans (15.8 oz), rinsed and drained

Greens

  • 8 ounces baby spinach

Broth

  • 3 cups low-sodium chicken broth

Cheese

  • ½ cup grated Parmesan cheese, plus extra for garnish

Instructions 

  • Heat oil in a large pot over medium-high heat. Cook turkey with onions, garlic, red pepper flakes, and black pepper until cooked through (about 7 minutes).
  • Add oregano, basil, tomatoes, and beans. Stir to combine.
  • Reduce heat, add spinach, cover for 2 minutes until wilted, then stir.
  • Add broth, bring to a simmer, and cook for 5 minutes until heated through.
  • Remove from heat, stir in Parmesan, and serve.

Notes

You can garnish with extra Parmesan or fresh herbs for added flavor.
