A hearty and nutritious soup combining ground turkey, beans, and spinach for a comforting meal.

Oil
1tablespoonolive oil
Ground Turkey
1poundground turkey
Vegetables
1mediumyellow onion, diced
1clovegarlic, minced
1pinchred pepper flakes
¼teaspooncoarse ground black pepper
1teaspoondried oregano
½teaspoondried basil
Canned Goods
1candiced tomatoes (14.5 oz), undrained
1cangreat northern beans (15.8 oz), rinsed and drained
Greens
8ouncesbaby spinach
Broth
3cupslow-sodium chicken broth
Cheese
½cupgrated Parmesan cheese, plus extra for garnish
Instructions
Heat oil in a large pot over medium-high heat. Cook turkey with onions, garlic, red pepper flakes, and black pepper until cooked through (about 7 minutes).
Add oregano, basil, tomatoes, and beans. Stir to combine.
Reduce heat, add spinach, cover for 2 minutes until wilted, then stir.
Add broth, bring to a simmer, and cook for 5 minutes until heated through.
Remove from heat, stir in Parmesan, and serve.
Notes
You can garnish with extra Parmesan or fresh herbs for added flavor.
