A hearty and cheesy baked pasta dish featuring ground turkey, vegetables, and flavorful seasonings, perfect for a comforting family dinner.

Ingredients

Pasta and Seasonings

  • 1 pound dried pasta
  • 1 Tablespoon olive oil
  • 1 medium yellow onion (chopped)
  • 1 pound ground turkey
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon dried oregano
  • pinch red pepper flakes
  • 4 cloves garlic (minced)
  • 1 cup sliced mushrooms (any kind)
  • 28 ounce can crushed tomatoes
  • 2 Tablespoons balsamic vinegar
  • 2-3 cups baby spinach (roughly chopped)
  • 1.5 cups shredded mozzarella cheese
  • to taste fresh parsley or basil (optional garnish)
  • to taste kosher salt
  • to taste black pepper

Instructions 

  • Cook pasta in boiling salted water until 2 minutes less than al dente, then drain.
  • In an oven-safe skillet, cook onions and turkey with seasonings until browned, then add garlic and cook briefly.
  • Stir in mushrooms, crushed tomatoes, balsamic vinegar, and spinach; simmer for 5-7 minutes.
  • Add cooked pasta, mix in half the cheese, top with remaining cheese, and bake at 375°F for 15-20 minutes until bubbly and melted.
  • Let sit for 5 minutes, garnish with herbs, and serve.

Notes

For a browned top, broil for 1-2 minutes, watching carefully to prevent burning.
