Instructions
Cook pasta in boiling salted water until 2 minutes less than al dente, then drain.
In an oven-safe skillet, cook onions and turkey with seasonings until browned, then add garlic and cook briefly.
Stir in mushrooms, crushed tomatoes, balsamic vinegar, and spinach; simmer for 5-7 minutes.
Add cooked pasta, mix in half the cheese, top with remaining cheese, and bake at 375°F for 15-20 minutes until bubbly and melted.
Let sit for 5 minutes, garnish with herbs, and serve.
Notes
For a browned top, broil for 1-2 minutes, watching carefully to prevent burning.
