Ingredients

Pumpkins

  • 4 small sugar pumpkins (about 2 pounds each)
  • 5 tablespoons extra-virgin olive oil (divided)
  • Kosher salt Kosher salt (to taste)
  • Freshly ground black pepper black pepper (to taste)
  • 1 cup diced carrots
  • 1 cup diced yellow onion
  • ½ cup diced celery
  • 1 pound ground turkey
  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped fresh sage
  • cups stale French baguette cubes (½” cubes)
  • cups chicken stock
  • cups shredded Gruyère cheese (divided)

Instructions 

  • Preheat oven to 400ºF (200ºC). Slice tops off pumpkins, remove seeds, and roast until soft, about 35 minutes.
  • Sauté carrots, onion, and celery in 3 tbsp olive oil until tender. Add turkey, cook until browned, then toss with bread, salt, and pepper.
  • Lower oven to 350ºF (180ºC). Prepare sage butter by melting butter and cooking with sage until fragrant. Mix into turkey stuffing with chicken stock and 1 cup Gruyère.
  • Stuff pumpkins with mixture, top with remaining Gruyère, and bake until cheese melts and bubbles, about 15 minutes. Serve immediately.

Notes

Use fresh sage for best flavor and ensure bread is stale for optimal texture.
