Ingredients
Pumpkins
4smallsugar pumpkins(about 2 pounds each)
5tablespoonsextra-virgin olive oil(divided)
Kosher saltKosher salt(to taste)
Freshly ground black pepperblack pepper(to taste)
1cupdiced carrots
1cupdiced yellow onion
½cupdiced celery
1poundground turkey
3tablespoonsunsalted butter
2tablespoonschopped fresh sage
3½cupsstale French baguette cubes(½” cubes)
1½cupschicken stock
1½cupsshredded Gruyère cheese(divided)
Instructions
Preheat oven to 400ºF (200ºC). Slice tops off pumpkins, remove seeds, and roast until soft, about 35 minutes.
Sauté carrots, onion, and celery in 3 tbsp olive oil until tender. Add turkey, cook until browned, then toss with bread, salt, and pepper.
Lower oven to 350ºF (180ºC). Prepare sage butter by melting butter and cooking with sage until fragrant. Mix into turkey stuffing with chicken stock and 1 cup Gruyère.
Stuff pumpkins with mixture, top with remaining Gruyère, and bake until cheese melts and bubbles, about 15 minutes. Serve immediately.
Notes
Use fresh sage for best flavor and ensure bread is stale for optimal texture.
