A hearty and healthy skillet combining ground beef, zucchini, and sweet potatoes for a quick, flavorful meal.

Ingredients

Meat

  • 1 pound ground beef
  • 1 tablespoon olive oil

Vegetables

  • 2 medium zucchinis, sliced
  • 1 large sweet potato, peeled and diced
  • 1 onion chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes (optional) (for heat)
  • 1 cup chopped fresh spinach
  • 0.5 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped, for garnish

Instructions 

  • Cook ground beef until browned, then set aside.
  • Sauté onion and garlic until soft.
  • Add sweet potato, cover, and cook 5-7 minutes.
  • Stir in zucchini, cook 3 minutes, then add beef back in.
  • Season with spices, add spinach, and cook until wilted. Top with cheese and parsley.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
