A hearty and healthy skillet combining ground beef, zucchini, and sweet potatoes for a quick, flavorful meal.

Instructions
Cook ground beef until browned, then set aside.
Sauté onion and garlic until soft.
Add sweet potato, cover, and cook 5-7 minutes.
Stir in zucchini, cook 3 minutes, then add beef back in.
Season with spices, add spinach, and cook until wilted. Top with cheese and parsley.
Notes
