A delicious low-carb casserole combining savory ground beef, fresh zucchini, and melty mozzarella for a satisfying meal.

Ingredients

Vegetables

  • 1.5 lbs zucchini (cut into rounds, salted + pat dry)
  • 1 tbs olive oil
  • 1 medium onion (diced)
  • 8 oz mushrooms (diced)
  • 0.5 tsp salt (for vegetables)
  • 0.5 tsp garlic powder (for vegetables)
  • 0.5 tsp onion powder (for vegetables)
  • 1 lb ground beef
  • 0.5 tsp salt (for beef)
  • 0.5 tsp garlic powder (for beef)
  • 0.5 tsp onion powder (for beef)
  • 0.5 tsp paprika (for beef)
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 tsp Italian herb blend
  • 2 tbs grated parmesan

Instructions 

  • Preheat oven to 400℉ (200℃).
  • Sauté onions and mushrooms in olive oil for 2-5 minutes, then add salt, garlic powder, onion powder; set aside.
  • Cook ground beef with salt, garlic powder, onion powder, and paprika until no longer pink.
  • Layer zucchini, beef, vegetables, marinara, and cheese in a baking dish; top with Parmesan and herbs.
  • Bake for 20-25 minutes until bubbly and golden.

Notes

Salting zucchini helps remove excess moisture for better texture.
