A quick and hearty one-pan meal combining seasoned ground beef, rice, and vegetables for a satisfying dinner.

Ingredients

Meat and grains

  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • to taste Salt and pepper
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • Optional: 1 cup shredded cheddar cheese for topping

Instructions 

  • Heat oil in skillet, cook beef until browned; season with salt and pepper.
  • Add onions, peppers, and garlic; sauté 3-4 minutes.
  • Stir in paprika and oregano.
  • Add rice, then pour in broth and tomatoes; bring to boil.
  • Reduce heat, cover, and simmer 18-20 minutes; fluff rice and add cheese if desired.

Notes

You can add cheese at the end for extra flavor.
