A quick and hearty one-pan meal combining seasoned ground beef, rice, and vegetables for a satisfying dinner.
Ingredients
Meat and grains

ground beef

cup
long-grain white rice (uncooked)
Vegetables and seasonings

onion, chopped
2–3
cloves
garlic, minced
1
diced
bell pepper
1
cup
canned tomatoes or salsa
1 tsp
paprika
1 tsp
cumin
½ tsp
chili powder
to taste
Salt and pepper
1 cup
shredded cheese
shredded cheese (optional)
(optional but recommended)

frozen peas or mixed vegetables
2 tbsp
olive oil
Optional add-ins
corn, black beans, taco seasoning, jalapeños, Worcestershire sauce

Instructions
Heat olive oil in a skillet, cook onion until tender, then add garlic for 30 seconds.
Add ground beef, season with salt and pepper, cook until browned. Drain excess fat if needed.
Stir in bell pepper and spices; toast for 1 minute. Add rice, stir to coat, and toast for another minute.
Pour in broth and tomatoes, bring to a boil, then simmer covered for 18–20 minutes. Stir halfway.
In the last 5 minutes, stir in peas, then top with cheese, cover until melted. Fluff and serve.
Notes
For extra flavor, add jalapeños or a squeeze of lime before serving.
