A delicious and hearty vegan panini featuring grilled vegetables, vegan mozzarella, and flavorful basil pesto, perfect for a satisfying meal.

Ingredients

Vegetables

  • 1 small zucchini (sliced lengthwise)
  • 1 small eggplant (sliced lengthwise)
  • 1 red bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 2 tbsp olive oil
  • to taste Salt and pepper

Bread

  • 4 ciabatta rolls sliced in half
  • 1/2 cup vegan mozzarella cheese (shredded or sliced)
  • 1/4 cup basil pesto (store-bought or homemade)

Garnish

  • optional fresh basil leaves (for garnish)

Instructions 

  • Preheat your grill or grill pan to medium-high heat.
  • Toss the sliced vegetables with olive oil, salt, and pepper. Grill each side for 3-4 minutes until tender and charred.
  • Spread basil pesto on the cut sides of the bread. Layer grilled vegetables and vegan mozzarella on the bottom halves. Cover with top halves.
  • Grill the assembled sandwiches for 3-4 minutes per side until crispy and cheese melts. Slice and serve hot, garnished with basil leaves if desired.

Notes

Press the sandwiches firmly while grilling for a crispy exterior.
