  • 4 pieces boneless (skinless chicken breasts (pounded to even thickness))
  • 3 tablespoons olive oil (extra virgin preferred for best flavor)
  • 1 piece lemon (juice of 1 lemon)
  • 1 tablespoon lemon zest
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh oregano (finely chopped or 1 tsp dried)
  • 1 teaspoon smoked paprika
  • to taste Salt and freshly ground black pepper
  • Optional garnish: chopped sun-dried tomatoes, shaved Parmesan, or fresh parsley

Instructions 

  • Combine olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, oregano, smoked paprika, salt, and pepper to create the marinade.
  • Marinate the chicken breasts in the mixture for at least 30 minutes.
  • Preheat the grill to medium-high heat.
  • Grill the chicken for 6-8 minutes per side until cooked through.
  • Let rest for a few minutes, then serve garnished with optional toppings.

Notes

For extra flavor, marinate the chicken overnight.
