Ingredients

Vegetables

  • 1 piece zucchini (sliced lengthwise)
  • 1 piece yellow squash (sliced lengthwise)
  • 1 piece red bell pepper (quartered)
  • 1 piece yellow bell pepper (quartered)
  • 1 piece red onion (cut into thick rounds)
  • 1 cup cherry tomatoes
  • 2 ears corn (husked)
  • 2 tablespoons olive oil
  • to taste Salt and black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard Dijon mustard
  • 1 clove garlic garlic (minced)
  • to taste Feta cheese and fresh basil (for garnish)

Instructions 

  • Preheat grill to medium-high and oil grates. Toss vegetables with olive oil, salt, and pepper.
  • Grill vegetables until tender and slightly charred, about 3-5 minutes per side. Cool slightly.
  • Cut corn off cobs and chop grilled vegetables into bite-sized pieces.
  • Whisk together olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper to make dressing. Toss with vegetables.
  • Garnish with crumbled feta and basil before serving.
