Ingredients
Dough
0.75teaspoonactive yeast
0.125teaspoonsugar
1.75cupsflour
1teaspoonsalt
1tablespoonfresh rosemary, chopped
¾cupwater
1teaspoonolive oil
Vegetables
½cupassorted baby squash
1tablespoonolive oil
Salt and freshly ground pepperto taste
Toppings & Sauce
2tablespoonsmixed pitted olives
2tablespoonscherry tomato
1tablespoonfresh oregano leaves
2clovesroasted garlic
¼cuptahini
Juice and zest of 1 lemonlemon juice and zest
Pinchsalt
Water up to ¼ cupwater for thinning sauce
Instructions
Combine yeast, sugar, flour, salt, and rosemary in a food processor; add water and pulse until dough forms. Knead until smooth, then let rise until doubled (about 1 hour).
Divide dough, roll into 8-inch ovals, and grill each side until bubbles form and bread puffs (about 1-2 minutes per side).
Grill halved vegetables with olive oil, salt, and pepper until cooked (about 5-6 minutes).
Whisk roasted garlic, tahini, lemon juice, lemon zest, salt, and water until smooth and pourable.
Spread tahini sauce on flatbreads, top with grilled vegetables, olives, cherry tomatoes, oregano, and drizzle with more tahini sauce.
