Ingredients

Dough

  • 0.75 teaspoon active yeast
  • 0.125 teaspoon sugar
  • 1.75 cups flour
  • 1 teaspoon salt
  • 1 tablespoon fresh rosemary, chopped
  • ¾ cup water
  • 1 teaspoon olive oil

Vegetables

  • ½ cup assorted baby squash
  • 1 tablespoon olive oil
  • Salt and freshly ground pepper to taste

Toppings & Sauce

  • 2 tablespoons mixed pitted olives
  • 2 tablespoons cherry tomato
  • 1 tablespoon fresh oregano leaves
  • 2 cloves roasted garlic
  • ¼ cup tahini
  • Juice and zest of 1 lemon lemon juice and zest
  • Pinch salt
  • Water up to ¼ cup water for thinning sauce

Instructions 

  • Combine yeast, sugar, flour, salt, and rosemary in a food processor; add water and pulse until dough forms. Knead until smooth, then let rise until doubled (about 1 hour).
  • Divide dough, roll into 8-inch ovals, and grill each side until bubbles form and bread puffs (about 1-2 minutes per side).
  • Grill halved vegetables with olive oil, salt, and pepper until cooked (about 5-6 minutes).
  • Whisk roasted garlic, tahini, lemon juice, lemon zest, salt, and water until smooth and pourable.
  • Spread tahini sauce on flatbreads, top with grilled vegetables, olives, cherry tomatoes, oregano, and drizzle with more tahini sauce.

Notes

For best results, grill vegetables until tender and slightly charred for added flavor.
