Ingredients

Chicken

  • 1 pound skinless, boneless chicken breasts (about 2 large breasts, cubed)
  • 2 cloves garlic (pressed)
  • 1 tablespoon lemon zest (about 1 tablespoon)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Pinch black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon paprika

Flatbreads

  • 4 pieces Middle Eastern-style flatbreads (or pita bread)

Greens

  • to taste Arugula greens
  • to taste Sliced tomatoes

Spicy Garlic Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt (full-fat, plain)
  • 3 cloves garlic (pressed)
  • 1 tablespoon tahini
  • 2-3 teaspoons sriracha (adjust to spice preference)
  • 1 teaspoon salt
  • Pinch black pepper
  • Pinch cayenne pepper (adjust for spice level)
  • 1/2 teaspoon lemon juice

Instructions 

  • Marinate the chicken with olive oil, garlic, lemon zest, lemon juice, salt, pepper, oregano, cumin, coriander, and paprika for 20 minutes or overnight.
  • Whisk together all ingredients for the spicy garlic sauce until smooth; set aside.
  • Grill the marinated chicken skewers over medium-high heat for 6-8 minutes until charred and cooked through; rest for 5-10 minutes, then remove chicken from skewers.
  • Spread spicy garlic sauce on flatbreads, add greens, sliced tomatoes, and lemon chicken, then drizzle with more sauce.
  • Fold the flatbread into a wrap, secure with parchment or foil if desired, and serve.

Notes

Use water-soaked skewers to prevent burning and adjust spice levels to taste.
