Delicious grilled chicken wrapped in flatbread with fresh greens, tomatoes, and a spicy garlic sauce for a flavorful meal.

Ingredients

Chicken

  • 1 pound skinless, boneless chicken breasts (about 2 large breasts, cubed)
  • 2 cloves garlic (pressed)
  • 1 tablespoon lemon zest (about 1 tablespoon)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Pinch black pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon coriander
  • 0.25 teaspoon paprika

Flatbreads

  • 4 pieces middle eastern-style flatbreads (or pita bread)

Greens

  • to taste Arugula greens

Tomatoes

  • to taste sliced tomatoes
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream or Greek yogurt (full-fat, plain)
  • 3 cloves garlic (pressed)
  • 1 tablespoon tahini
  • 2-3 teaspoons sriracha (adjust to taste)
  • 1 teaspoon salt
  • Pinch black pepper
  • Pinch cayenne pepper (adjust to spice preference)
  • 0.5 teaspoon lemon juice

Instructions 

  • Toss chicken with olive oil, garlic, lemon zest, lemon juice, salt, pepper, oregano, cumin, coriander, and paprika. Marinate for 20 minutes.
  • Skewer chicken and grill over medium-high heat for 6-8 minutes, turning until charred and cooked through. Rest for 5-10 minutes, then remove from skewers.
  • Prepare garlic sauce by whisking together mayonnaise, sour cream, garlic, tahini, sriracha, salt, pepper, cayenne, and lemon juice. Keep refrigerated.
  • Assemble wraps by spreading garlic sauce on flatbread, adding greens, tomato slices, and chicken. Fold to form a wrap, using parchment or foil if desired.

Notes

Soak skewers in water before grilling to prevent burning. Adjust spice levels to taste.
