A flavorful and healthy meal featuring tender grilled chicken, crispy sweet potato fries, and fresh avocado salsa.

Ingredients

Protein

  • 1 piece chicken breast, sliced into tenders
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or chopped fresh parsley
  • to taste Salt & pepper

Vegetables

  • 1 medium sweet potato, peeled & cut into fries
  • 1/2 tsp smoked paprika
  • 1 avocado avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 2 tbsp ranch or Greek yogurt-based herb sauce (optional)

Instructions 

  • Preheat oven to 425°F (220°C). Toss sweet potato fries with olive oil, smoked paprika, and salt. Bake for 25–30 minutes until crispy.
  • Season chicken tenders with garlic powder, Italian seasoning, salt, and pepper. Grill or pan-fry until golden and cooked through, about 3–4 minutes per side.
  • Mix diced avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  • Assemble by layering grilled chicken, sweet potato fries, and avocado salsa. Serve with optional herb sauce.

Notes

For extra flavor, marinate the chicken with herbs before grilling.
