A delicious and hearty sandwich featuring marinated grilled chicken, caramelized onions, fresh tomatoes, arugula, and a blend of three cheeses, all toasted to perfection.

Ingredients

Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
  • to taste Salt and pepper

Onions

  • 1 large onion, thinly sliced

Bread and spreads

  • 4 slices rustic bread
  • 4 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon honey
  • 4 slices ripe tomato
  • 1 handful arugula or spinach
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Gruyère cheese

Instructions 

  • Mix olive oil, garlic, lemon juice, herbs, salt, and pepper to make marinade. Marinate chicken for 15 minutes.
  • Cook onions in olive oil until caramelized. Grill chicken 6-8 minutes per side, then rest and slice.
  • Mix mayonnaise, Dijon mustard, and honey to create sauce. Spread on bread slices.
  • Assemble sandwiches with chicken, onions, tomato, arugula, and cheeses. Toast on grill for 3-4 minutes per side until bread is toasted and cheese melts. Slice and serve warm.

Notes

For extra flavor, add a dash of hot sauce or herbs.
