Ingredients

For the Chicken:

  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 3 cloves garlic, minced
  • 0.5 Tbsp dried oregano
  • 0.5 tsp salt
  • to taste black pepper
  • 6 pieces boneless, skinless chicken thighs (about 1.8 lbs.)

For the Sauce:

  • 0.5 cup Greek yogurt
  • 0.5 tsp dried dill
  • 1 Tbsp lemon juice
  • 0.25 tsp salt

For the Filling:

  • 1 pint grape tomatoes
  • 6 pieces flatbread
  • 10 oz. hummus

Instructions 

  • Mix olive oil, lemon juice, garlic, oregano, salt, and pepper; marinate chicken for 30 minutes.
  • Cook chicken in a skillet until fully cooked, then rest and slice.
  • Combine Greek yogurt, dill, lemon juice, and salt to make the sauce.
  • Prepare vegetables: dice cucumber, halve tomatoes, thinly slice onion.
  • Spread hummus on flatbread, add chicken and vegetables, drizzle with sauce, then roll.
  • Serve immediately.

Notes

Marinate chicken at least 30 minutes for best flavor.
