Ingredients

Marinade

  • 0.25 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Chicken and Vegetables

  • 1.5 pounds boneless, skinless chicken breasts, cut into chunks
  • 1 cup cherry tomatoes
  • 1 red onion red onion, cut into chunks
  • 1 cup bell peppers, assorted colors, cut into chunks

Skewers

  • 4 wooden skewers soaked in water

Instructions 

  • Mix olive oil, garlic, lemon juice, oregano, salt, and pepper to make the marinade.
  • Marinate chicken chunks in the mixture for at least 30 minutes.
  • Thread chicken and vegetables onto soaked skewers alternately.
  • Grill or bake skewers until chicken is cooked through, about 15 minutes.

Notes

Soaking skewers prevents burning during grilling.
