A fresh and flavorful Greek Chicken Salad combining marinated grilled chicken with crisp vegetables and creamy yogurt dressing.

Ingredients

Protein

  • 600 g Chicken thighs

Dairy

  • 200 g feta
  • 30 g Kalamata olives
  • 3 tbsp yoghurt
  • 450 g 0 fat yogurt to serve

Produce

  • Juice of one lemon lemon juice
  • 400 g plum tomatoes
  • 2 cucumbers cucumbers, hollowed and thinly sliced
  • 5 mixed peppers mixed peppers, sliced into chunks

Seasonings & Oils

  • 4 tbsp extra virgin olive oil
  • 1 tbsp oregano
  • 2 tsp oregano
  • 1 tbsp sea salt

Instructions 

  • Marinate chicken with 3 tbsp yogurt, 1 tbsp oregano, lemon juice, salt, and pepper for 2 hours.
  • Grill marinated chicken until cooked through, then cool and slice into chunks.
  • Whisk together olive oil, lemon juice, oregano, and salt to make dressing.
  • Combine salad vegetables, grilled chicken, and dressing in a bowl. Serve with yogurt.

Use fresh ingredients for best flavor and serve immediately.
