A simple, gluten-free gingerbread pie crust made with oats, nuts, and warming spices, perfect for holiday desserts.
Ingredients
Dry ingredients

Oat flour

Nut meal (ground walnuts or pecans)

Maple syrup (or molasses)

Finely milled ground flax (or ground chia)

Instructions
Mix 2 Tbsp ground flax with 6 Tbsp water; let thicken for 1 minute.
Combine dry ingredients: oat flour, ground nuts, cinnamon, and ginger.
Add maple syrup and flax egg; mix until dough forms a ball. Add 1 Tbsp oat flour if too sticky.
Roll out dough or refrigerate overnight in an airtight container.
