A quick and flavorful seafood pasta dish featuring succulent shrimp, cherry tomatoes, and garlic, perfect for a satisfying meal.

Ingredients

Pasta

  • 12 ounces spaghetti (gluten-free or whole wheat)

Oil

  • 3 tablespoons olive oil (divided)
  • 3-4 cloves garlic cloves (pressed)

Shrimp

  • 1 pound large raw shrimp (peeled and deveined)

Spices

  • 1 teaspoon chili flakes (or to taste)

Salt and Pepper

  • Kosher salt and ground pepper (to taste)

Vegetables

  • 1 pint cherry tomatoes

Cheese

  • 1/2 cup freshly grated Parmesan cheese

Herbs

  • 1/4 cup fresh parsley (finely chopped)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and reserve 2/3 cup of pasta water.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat, add garlic, and cook for 1 minute.
  • Add shrimp and cook for 3-4 minutes until pink, then sprinkle chili flakes and set aside.
  • In the same skillet, add remaining oil and cook cherry tomatoes until burst, about 2-3 minutes. Deglaze with reserved pasta water.
  • Return shrimp and cooked pasta to the skillet, add Parmesan, toss to combine, and season with salt and pepper.
  • Serve immediately garnished with chopped parsley.

Notes

For extra flavor, add a squeeze of lemon or red pepper flakes.
