Garlic-Parmesan Roasted Cauliflower

A flavorful roasted cauliflower dish infused with garlic, Parmesan, and fresh herbs, perfect as a side or light main.

Ingredients

Vegetables

  • 1 medium head cauliflower, cut into florets (about 8 cups)
  • 3 Tbsp. extra-virgin olive oil
  • 1 1/2 tsp. paprika
  • 3/4 tsp. kosher salt
  • 1/2 tsp. cracked black pepper
  • 3 cloves garlic, minced
  • 2 to 3 Tbsp. grated Parmesan cheese
  • 1/2 lemon juice of 1/2 lemon
  • 2 Tbsp. finely chopped fresh parsley

Instructions 

  • Preheat oven to 450ºF (230ºC). Toss cauliflower florets with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, tossing halfway.
  • Sprinkle Parmesan and garlic over cauliflower, bake for 5 more minutes.
  • Spritz lemon juice over the cauliflower, garnish with parsley, toss, and serve.

Notes

For extra flavor, add a pinch of red pepper flakes or a drizzle of honey before roasting.
