A flavorful roasted cauliflower dish infused with garlic, Parmesan, and fresh herbs, perfect as a side or light main.
Ingredients

1medium headcauliflower, cut into florets(about 8 cups)
3Tbsp.extra-virgin olive oil
1 1/2tsp.paprika
3/4tsp.kosher salt
1/2tsp.cracked black pepper
3clovesgarlic, minced
2 to 3Tbsp.grated Parmesan cheese
1/2lemonjuice of 1/2 lemon
2Tbsp.finely chopped fresh parsley
Instructions
Preheat oven to 450ºF (230ºC). Toss cauliflower florets with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, tossing halfway.
Sprinkle Parmesan and garlic over cauliflower, bake for 5 more minutes.
Spritz lemon juice over the cauliflower, garnish with parsley, toss, and serve.
Notes
For extra flavor, add a pinch of red pepper flakes or a drizzle of honey before roasting.
