Ingredients

Protein

  • 2 pounds Boneless Skinless Chicken Breasts or Thighs (can be used for a richer flavor)

Oil

  • 2 tablespoons Extra Virgin Olive Oil (a neutral oil can be substituted)

Seasonings

  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper

Butter & Alternatives

  • 4 tablespoons Unsalted Butter (can be swapped with ghee or dairy-free butter)

Aromatics & Citrus

  • 4 cloves Garlic, finely minced
  • 2 tablespoons Fresh Lemon Juice (use fresh for vibrant flavor)
  • 1 teaspoon Fresh Lemon Zest

Herbs & Spices

  • 2 tablespoons Fresh Parsley, chopped
  • 1 teaspoon Red Pepper Flakes (optional)

Skewers

  • 6 pieces Wooden or Metal Skewers (wooden skewers require soaking for 30 minutes)

Instructions 

  • Cut chicken into bite-sized pieces and marinate with garlic, lemon juice, lemon zest, salt, pepper, and chopped parsley for 15 minutes.
  • Thread chicken pieces onto soaked skewers.
  • Preheat grill to medium-high heat. Grill skewers for 10 minutes, turning occasionally, until cooked through.
  • In a small saucepan, melt butter and brush over cooked skewers. Sprinkle with red pepper flakes if desired.
  • Garnish with additional parsley and serve hot.

Notes

Soak wooden skewers for at least 30 minutes before grilling to prevent burning.
