Instructions
Pat the chicken dry, season with salt and pepper, and dry brine for 2 hours or overnight.
Preheat oven to 425°F (220°C). Mix olive oil, parsley, thyme, rosemary, and garlic; season with salt and pepper.
Place chicken in a baking dish with halved garlic and lemon, coat with herb mixture, and distribute evenly.
Roast for 40-50 minutes until internal temperature reaches 165°F (74°C) and skin is crispy. Baste halfway and rotate for even crispness.
Rest for 15 minutes, then carve, serve with pan juices, lemon, and roasted garlic.
Notes
For extra crisp skin, dry the chicken thoroughly before roasting.
