Instructions
Cut chicken into bite-sized cubes and season with salt, pepper, and paprika.
Heat olive oil in a skillet over medium-high heat. Sear chicken until browned and cooked through, then set aside.
Lower heat, add butter, garlic, and paprika. Cook garlic for 1 minute, then add lemon juice and toss chicken to coat.
Meanwhile, bring chicken broth to a boil, stir in couscous, cover, and steam for 5 minutes. Fluff with a fork, then stir in lemon zest and Parmesan.
Serve couscous on plates, top with chicken bites, drizzle pan juices, and garnish with parsley or extra Parmesan.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
