A flavorful and easy-to-make dish featuring tender chicken bites served over lemon-infused Parmesan couscous.

Ingredients

Protein

  • 2 pounds boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper
  • 2 tablespoons lemon juice

Couscous

  • 1 cup couscous
  • 1 1/2 cups chicken broth or water
  • 1 teaspoon lemon zest
  • 1/4 cup Parmesan cheese
  • Chopped parsley or extra Parmesan (optional) Chopped parsley or extra Parmesan (optional)

Instructions 

  • Cut chicken into bite-sized cubes and season with salt, pepper, and paprika.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken until browned and cooked through, then set aside.
  • Lower heat, add butter, garlic, and paprika. Cook garlic for 1 minute, then add lemon juice and toss chicken to coat.
  • Meanwhile, bring chicken broth to a boil, stir in couscous, cover, and steam for 5 minutes. Fluff with a fork, then stir in lemon zest and Parmesan.
  • Serve couscous on plates, top with chicken bites, drizzle pan juices, and garnish with parsley or extra Parmesan.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
