A delicious one-pan meal featuring tender chicken breasts cooked with flavorful garlic butter and a medley of fresh vegetables and potatoes.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)

Dairy

  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced

Spices & Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme

Instructions 

  • Preheat oven to 400°F (200°C).
  • Season chicken breasts with salt, pepper, paprika, and thyme.
  • In a skillet, melt butter and cook chicken until browned, then add garlic and cook for 1 minute.
  • Add potatoes and vegetables to the skillet, toss with garlic butter, and transfer to the oven.
  • Bake for 20-25 minutes until chicken is cooked through and vegetables are tender.

Notes

For extra flavor, sprinkle fresh herbs before serving.
