Ingredients

Dairy

  • 2 cups heavy cream
  • 1 cup whole milk

Dry Ingredients

  • 3 tbsp cocoa powder (Hershey's Special Dark)
  • 1 cup chocolate (semi-sweet or dark)
  • 3/4 cup sugar
  • 1 pinch salt

Eggs

  • 5 egg yolks room temperature egg yolks
  • 1/2 tsp vanilla

Add-ins

  • 1 batch Fudge Brownie Recipe
  • 1 cup mini chocolate chips (if desired)

Instructions 

  • Whisk together heavy cream, milk, cocoa powder, and sugar in a saucepan and heat until warm.
  • In a separate bowl, whisk egg yolks and vanilla, then slowly temper into the warm chocolate mixture.
  • Cook the mixture over low heat until it thickens slightly, then cool completely.
  • Chop fudge brownies into small pieces and fold into the cooled custard along with mini chocolate chips.
  • Churn the mixture in an ice cream maker according to manufacturer instructions, then freeze until firm.

Notes

For best results, use high-quality chocolate and ensure the custard is thoroughly cooled before churning.
