A comforting and flavorful chicken noodle soup infused with fresh herbs, perfect for a cozy meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cups unsalted chicken broth

Herbs

  • 3-4 sprigs fresh thyme
  • 2 springs fresh oregano
  • 1 stalk rosemary
  • 2 cloves garlic, crushed
  • 1.5 tsp kosher salt
  • to taste freshly ground black pepper
  • 2 tbsp olive oil

Vegetables

  • 1 yellow onion, finely diced
  • 2 large carrots, peeled and chopped
  • 3 stalks celery, chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup dill, chopped
  • 5-6 leaves fresh basil, chopped

Cooked pasta, rice or crusty bread for serving

Instructions 

  • In a medium saucepan, combine chicken breasts, chicken broth, herbs, garlic, salt, and pepper. Bring to a boil, then simmer for 1 hour until tender.
  • Meanwhile, heat olive oil in a large pot. Sauté onion for 10-15 minutes until caramelized. Add carrots and celery.
  • Shred the cooked chicken and strain the cooking liquid. Add shredded chicken, broth, and strained liquid to the vegetables. Simmer until vegetables soften.
  • Stir in parsley, dill, and basil. Serve with cooked pasta, rice, or bread.

Notes

Use fresh herbs for the best flavor and adjust seasoning to taste.
