These light and healthy oat flour muffins are quick to make, customizable with your favorite mix-ins, and perfect for a nutritious breakfast or snack.

Ingredients

Dry ingredients

  • 2 and 1/3 cups oat flour (*)
  • 1/2 cup coconut sugar ((or brown sugar))
  • 1/3 cup cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon ((optional))

Wet ingredients

  • 2 large eggs
  • 2/3 cup milk (any type)
  • 2/3 cup Greek yogurt (regular or vanilla)
  • 1/3 cup olive oil ((canola or vegetable oil works too))
  • 2 teaspoons vanilla extract
  • 1 cup mix-ins (e.g., dark chocolate chips)

Instructions 

  • Preheat oven to 375ºF (190ºC). Line a 12-cup muffin tin with paper liners and spray with non-stick spray.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
  • Combine wet and dry mixtures, then fold in your mix-ins.
  • Distribute batter evenly into muffin cups. Bake for 14-16 minutes until a toothpick comes out clean.
  • Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best rise, bake in the upper third of the oven. Feel free to customize with your favorite mix-ins!
