These healthy, flourless muffins combine chickpeas and peanut butter for a protein-packed snack or breakfast treat.
Ingredients
Canned Chickpeas

chickpeas, rinsed and drained

large eggs

creamy natural peanut butter
(just peanuts + salt)

pure maple syrup
(or sub honey)

vanilla extract

baking powder

(plus 2 tbsp for topping)
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with liners and spray with nonstick spray.
Blend chickpeas and 1 egg until smooth. Add remaining eggs, peanut butter, maple syrup, vanilla, baking powder, and salt; blend until combined.
Fold in chocolate chips. Divide batter among muffin cups and sprinkle with remaining chips.
Bake for 25 minutes until a toothpick comes out clean. Cool for 10 minutes before removing from tin.
Notes
Store muffins at room temperature for a day, then refrigerate in an airtight container.
