Fluffy Flourless Peanut Butter Chickpea Muffins

These healthy, flourless muffins combine chickpeas and peanut butter for a protein-packed snack or breakfast treat.

Ingredients

Canned Chickpeas

  • 1 can chickpeas, rinsed and drained
  • 3 large eggs eggs
  • ½ cup creamy natural peanut butter (just peanuts + salt)
  • ½ cup pure maple syrup (or sub honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • cup dark chocolate chips (plus 2 tbsp for topping)

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with liners and spray with nonstick spray.
  • Blend chickpeas and 1 egg until smooth. Add remaining eggs, peanut butter, maple syrup, vanilla, baking powder, and salt; blend until combined.
  • Fold in chocolate chips. Divide batter among muffin cups and sprinkle with remaining chips.
  • Bake for 25 minutes until a toothpick comes out clean. Cool for 10 minutes before removing from tin.

Notes

Store muffins at room temperature for a day, then refrigerate in an airtight container.
