Ingredients

Bananas

  • 4 medium overripe or speckled bananas

Flour

  • 1 cup plain flour

Brown Sugar

  • 3/4 cup packed light brown sugar

Butter

  • 1/3 cup melted butter

Egg

  • 1 large large egg, whisked

Vanilla Extract

  • 1/2 tablespoon vanilla extract

Baking Soda

  • 1 teaspoon baking soda

Salt

  • 1/4 teaspoon salt

Chocolate Chips

  • 1/2 cup chocolate chips (optional)

Crushed Walnuts

  • 1/2 cup crushed walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a bowl, mash bananas and mix with melted butter, egg, and vanilla extract.
  • In a separate bowl, whisk together flour, brown sugar, baking soda, and salt.
  • Combine wet and dry ingredients, then fold in chocolate chips and walnuts if using.
  • Divide batter among muffin cups and bake for 20 minutes or until golden and cooked through.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dry ingredients.
