Ingredients

Dry ingredients

  • 2 cups almond flour
  • 1 tsp baking powder (gluten-free if needed)
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Pinch salt

Wet ingredients

  • 2 cups grated carrots
  • 3/4 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in another bowl.
  • Combine wet and dry, fold in carrots, and scoop into muffin cups.
  • Bake for 20–25 minutes, then cool before serving.
