Ingredients

whole oranges

  • 2 cups almond flour
  • 4 large eggs (room temperature)
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 cup olive oil
  • Optional zest of 1 orange (optional)

Instructions 

  • Boil whole oranges in water until soft, about 1 hour. Cool and blend until smooth.
  • Mix eggs, olive oil, sugar, and orange puree until combined.
  • Fold in almond flour, baking powder, and orange zest if using.
  • Pour batter into a greased pan and bake at 350°F (175°C) for 40 minutes.
  • Cool completely before slicing and serving.
