Ingredients

Vegetables

  • 1 medium green cabbage ((approx. 2 lbs))
  • 1 large onion ((1 cup chopped))
  • 2 medium carrots ((1 cup chopped))
  • 2 stalks celery ((1 cup chopped))
  • 1 medium bell pepper ((1 cup chopped))
  • 4 cloves garlic (minced)
  • 1 can diced tomatoes ((14.5 oz))
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt ((adjust to taste))
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups green beans (fresh or frozen)

Instructions 

  • Chop all vegetables as indicated.
  • Heat olive oil, sauté onion, carrot, and celery for 5 minutes.
  • Add bell pepper, garlic, and green beans; cook 3-4 minutes.
  • Stir in cabbage, then add tomatoes and broth. Season and bring to boil.
  • Simmer for 30 minutes until vegetables are tender. Adjust seasoning and serve.
