Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt

Wet ingredients

  • 1.5 cups whole milk
  • 4 tbsp unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions 

  • Mix dry ingredients until no lumps remain.
  • Combine wet ingredients in a separate bowl.
  • Pour wet into dry and whisk until just combined.
  • Heat a greased skillet over medium heat.
  • Pour batter and cook until bubbles form, then flip and cook until golden.

Notes

For extra fluffiness, do not overmix the batter.
