A quick and comforting Chinese-inspired soup featuring silky egg ribbons and flavorful broth.

Ingredients

Broth

  • 4 cups low-sodium chicken broth (or vegetable broth)
  • 2 tablespoons cornstarch
  • 1 teaspoon ground ginger
  • ½ teaspoon kosher salt
  • ½ teaspoon toasted sesame oil
  • ¼ teaspoon tamari soy sauce
  • ¼ teaspoon ground turmeric (optional for color)
  • pinch ground white pepper
  • 3 large eggs (lightly beaten)
  • 1 green onion (thinly sliced on a diagonal)

Instructions 

  • Mix ¼ cup of broth with cornstarch to make a slurry.
  • Simmer remaining broth with ginger, soy, sesame oil, salt, and white pepper. Stir in slurry and cook until slightly thickened.
  • Reduce heat, slowly pour in beaten eggs while stirring to form ribbons. Let sit for 30 seconds.
  • Ladle into bowls and garnish with sliced green onions before serving.

Notes

Adjust seasoning to taste and add turmeric for color if desired.
