A quick and comforting Chinese-inspired soup featuring silky egg ribbons and flavorful broth.
Ingredients
Broth

low-sodium chicken broth
(or vegetable broth)

cornstarch

Instructions
Stir ¼ cup of broth with cornstarch to make a slurry.
Simmer remaining broth with ginger, soy, sesame oil, salt, and white pepper. Add slurry and cook until slightly thickened.
Reduce heat, slowly pour in beaten eggs while stirring to form ribbons. Let sit for 30 seconds.
Ladle into bowls and garnish with sliced green onions before serving.
Notes
Adjust seasoning to taste and add more ginger or soy for extra flavor.
