A quick and delicious breakfast featuring crispy toast topped with cheesy, herb-infused eggs.
Ingredients

hearty sandwich bread (no large holes)

grated cheese (cheddar, pepper jack, or gruyere)

finely chopped fresh herbs (thyme or rosemary)

Salt and black pepper
a pinch
cayenne (optional)

Instructions
Toast bread lightly until golden.
Preheat oven to 400°F (200°C).
Beat egg until fully combined, then stir in cheese, herbs, salt, and pepper.
Spread egg mixture onto toasted bread, sprinkle cayenne if desired.
Bake for 10–12 minutes until puffed and golden.
Notes
For extra flavor, add a dash of hot sauce or herbs.
