Instructions
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and garlic; sauté until softened.
Add potatoes, green beans, diced tomatoes, bay leaves, herbs, salt, and pepper. Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 20-25 minutes until vegetables are tender.
Stir in frozen corn, peas, and lemon juice; cook for another 5 minutes.
Remove bay leaves, garnish with parsley, and serve hot.
Notes
For extra flavor, add a splash of balsamic vinegar before serving.
