A hearty and healthy vegetable soup perfect for a quick, nutritious meal. Packed with fresh vegetables and flavorful herbs, it's easy to make and satisfying.

Ingredients

Vegetables

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 4 medium carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 4 cloves garlic, minced
  • 2 tsp italian herb blend
  • 1 tsp kosher salt
  • 0.5 tsp ground black pepper
  • 3 potatoes yukon gold potatoes, peeled and diced
  • 1.5 cups chopped fresh green beans
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 bay leaves bay leaves
  • 6 to 8 cups low-sodium vegetable broth
  • 1 cup frozen corn kernels
  • 1 cup frozen green peas
  • 2 to 3 tbsp freshly squeezed lemon juice
  • 1/4 cup finely chopped fresh parsley

Instructions 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and garlic; sauté until softened.
  • Add potatoes, green beans, diced tomatoes, bay leaves, herbs, salt, and pepper. Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 20-25 minutes until vegetables are tender.
  • Stir in frozen corn, peas, and lemon juice; cook for another 5 minutes.
  • Remove bay leaves, garnish with parsley, and serve hot.

Notes

For extra flavor, add a splash of balsamic vinegar before serving.
