Ingredients

Protein

  • 1 pound Ground Turkey (choose lean turkey for a healthy base)

Vegetables

  • 1 Onion Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 Bell Pepper Bell Pepper (diced)
  • 1 Carrot Carrot (shredded or diced)
  • 1 Zucchini Zucchini (chopped)

Grains

  • 1 cup Long-grain White Rice

Broth & Paste

  • 2 cups Low-sodium Chicken Broth
  • 2 tablespoons Tomato Paste

Seasonings

  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black Pepper (to taste)

Garnish

  • 1/4 cup Fresh Parsley (chopped)
  • 1/4 cup Grated Parmesan Cheese (optional)

Instructions 

  • Sauté chopped onion and minced garlic until fragrant.
  • Add ground turkey and cook until browned.
  • Stir in diced bell pepper, shredded carrot, and chopped zucchini; cook for a few minutes.
  • Add rice, tomato paste, seasonings, and chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed. Garnish with parsley and Parmesan if desired.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
