A flavorful and easy-to-make chicken burrito bowl perfect for family dinners, cooked effortlessly in the slow cooker.

Ingredients

Protein

  • 900 g boneless, skinless chicken breasts
  • 425 g black beans, drained and rinsed
  • 425 g pinto beans, drained and rinsed
  • 410 g corn kernels, drained
  • 410 g diced tomatoes with green chilies
  • 240 ml tomato sauce
  • 150 g small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 30 ml juice of 1 lime

Carbohydrates

  • 600 g cooked white or brown rice
  • 120 g shredded cheddar or Mexican-blend cheese

Dairy

  • 240 g sour cream or plain Greek yogurt
  • 150 g diced fresh tomatoes
  • 1 unit avocado, sliced
  • 75 g chopped fresh cilantro

Instructions 

  • Place chicken in slow cooker with beans, corn, tomatoes, sauce, onion, garlic, and spices. Cover and cook on low 6–7 hours.
  • Shred chicken with forks and stir to combine. Add lime juice before serving.
  • Serve over rice and top with cheese, sour cream, tomatoes, avocado, and cilantro.
