Broth and Potatoes

gold potatoes, (thinly sliced into rounds)

salmon fillet, (no skin, cut into large chunks)
Seasoning and Citrus

zest and juice of 1 lemon
Instructions
Heat olive oil in a large pot. Cook green onions, bell pepper, and garlic until fragrant (~3 min). Add half the dill and stir for 30 sec.
Add broth, potatoes, carrots, spices, salt, and pepper. Bring to boil, then simmer 5-6 min until tender.
Season salmon with salt, add to soup, and cook 3-5 min until flaky.
Stir in lemon zest, juice, and remaining dill. Serve hot with bread.
Notes
Use a mandolin for even slicing of potatoes and carrots for best results.
