Instructions
Heat olive oil in a large pot over medium heat.
Add chopped vegetables and garlic; sauté until tender.
Pour in chicken broth, add bay leaves, herbs, and parmesan rind; bring to a boil.
Add shredded chicken and noodles; cook until noodles are tender.
Remove bay leaves and parmesan rind before serving.
Notes
Save chicken bones and scraps to make your own broth for extra flavor.
