A hearty and flavorful soup combining tuna, white beans, and Mediterranean herbs for a quick, nutritious meal.
Ingredients
Vegetables and Broth

extra-virgin olive oil

garlic, minced

yellow onion, diced

cans
diced tomatoes (15 ounces each)

vegetable or chicken broth
Beans and Tuna

cans
cannellini beans, drained and rinsed (15 ounces each)

tuna in water, drained (5 ounces each)

bay leaves
bay leaves

teaspoon
dried thyme
to taste
Salt and black pepper
Optional Garnishes
as desired
fresh parsley, lemon zest, red pepper flakes
Instructions
Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes.
Add minced garlic and cook for 30 seconds.
Pour in diced tomatoes and broth, simmer for 5 minutes.
Stir in beans, bay leaves, thyme, and season with salt and pepper.
Add tuna, break into pieces, and simmer for 5 minutes. Remove bay leaves.
Adjust seasoning, add lemon juice if desired, and serve topped with parsley and lemon zest.
Notes
For extra flavor, add a squeeze of lemon or red pepper flakes before serving.
