Ingredients

Zucchini

  • 2 medium zucchinis (Choose firm zucchinis about 6-8 inches long for the perfect boat shape.)
  • 1 tbsp olive oil (Use to lightly brush the zucchini.)

  • 1 lb ground chicken (Lean and tender.)
  • 2 cloves garlic (Freshly minced.)
  • 1 medium onion (Finely chopped.)
  • 1 tbsp Italian seasoning

  • 1/4 cup Parmesan cheese (Adds a sharp, nutty finish.)

Instructions 

  • Preheat oven to 375°F (190°C). Cut zucchinis in half lengthwise and scoop out the centers.
  • Brush zucchini halves with olive oil and season with salt and pepper.
  • Cook ground chicken with garlic and onion until browned; stir in Italian seasoning.
  • Stuff zucchini boats with the chicken mixture, top with mozzarella and Parmesan cheese.
  • Bake for 25-30 minutes until cheese is melted and zucchini is tender. Garnish with basil or parsley before serving.
