Instructions
Bring a small pot of water to a boil. Add shrimp and cook for 2-3 minutes until just done. Drain and rinse under cold water.
Mix chopped shrimp with lite Kewpie mayo, chili crisp, and green onion in a bowl.
Lay lettuce leaves flat on parchment paper. Add arugula, cucumber, shrimp mixture, and sliced egg.
Wrap tightly like a burrito along the lettuce's natural curve. Serve with your favorite dressing.
