A quick and flavorful low-carb appetizer featuring spicy shrimp wrapped in crisp lettuce, perfect for a light meal or snack.

Ingredients

Protein

  • 0.25 lb shrimp, peeled and deveined
  • 1 tbsp lite Kewpie mayo
  • 1 tsp chili crisp
  • 1 green onion green onion, chopped
  • 0.125 tsp salt

Vegetables

  • 4 leaves iceberg lettuce
  • 1 hard-boiled egg sliced hard-boiled egg
  • 0.25 cup cucumber, thinly sliced
  • 0.5 cup arugula

Instructions 

  • Bring a small pot of water to a boil. Add shrimp and cook for 2-3 minutes until just done. Drain and rinse under cold water.
  • Mix chopped shrimp with lite Kewpie mayo, chili crisp, and green onion in a bowl.
  • Lay lettuce leaves flat on parchment paper. Add arugula, cucumber, shrimp mixture, and sliced egg.
  • Wrap tightly like a burrito along the lettuce's natural curve. Serve with your favorite dressing.

Notes

Feel free to add furikake or other seasonings for extra flavor.
