Rice and Broth

Instructions
In a pot, cook the rice with vegetable broth until tender, about 15 minutes.
Meanwhile, sauté garlic, onions, carrots, and bell peppers in butter until vegetables are tender, about 5 minutes.
Mix cooked rice with sautéed vegetables, peas, lemon juice, and parsley. Stir well.
Sprinkle lemon zest on top before serving.
Notes
For extra flavor, add a pinch of black pepper or a squeeze of additional lemon.
